Lime Syrup Pancake

You will need



• 1 cup milk or thin coconut cream
• 1 egg (optional)
• 3 cups wholemeal or plain flour, sifted
• 3–4 tablespoons oil
• Juice of 1 lime
• 6 teaspoons sugar

Method


1. Beat egg in a bowl, add milk or coconut
cream and mix well.
2. Gradually add the liquid mixture to the
flour and mix until a smooth batter is
formed. Leave for half an hour.
3. Heat a frying pan, then add just enough
oil to coat the base.
4. Add enough batter to thinly coat the
bottom of the pan. Allow to cook for a
few seconds until lightly browned at the
bottom. Turn the pancake and brown the
other side.
5. Turn over onto plate, place one teaspoon
of lime juice in the middle and add
one teaspoon of sugar. Roll and serve on a
clean plate.
